Bend & Snap!
People always are more then happy to express their feelings on different foods they don't enjoy. Liver & Onions. Calamari and some even Pizza. I am well aware the list goes on and on for different people. I am no different - though on occasion I will "indulge" in the latter. Now even though I don't like the Liver or the other, there is one thing that I never could figure out why anyone would want to consume it nor how they would consume it is such large quantities.
Kool-Aid. Pure Sugar Water!
O! I have always choked on that stuff whenever it was put in front of me, taking a sip before I knew what it was. It didn't matter the flavor of it either nor if it had ice or was room temperature - I disliked it just the same. Blah! It seemed "back in the day" it was a staple of every house - wealthy or less then. It would ring in at 10 packages for $1.00 and sometimes on sale it would be 12 for the same $1.00 price tag. Add 2 gallons of water, 8 cups of sugar, 1 tiny flavored packet - stir or shake and your Summer thirst was quenched.
I must stop myself here though so that I may go back to what I was planning on posting when I started this.

You would have been informed of, as of this morning that my plans for dinner tonight included making "my" famous Taco Soup (again) (perfect for a rainy day like it was today) along with some Beer Bread. I also let everyone in a "tiny" secret. I would be making dessert which I normally do NOT do.
I found a scribble of writings on how to make Keto Pumpkin Bars w/ Cream Cheese Frosting and honestly - it is October so what else could be more fitting?
I would suggest that you make these yourself. They are fast. Easy and Sugar Free. The kids loved them. Even Sebastian who doesn't touch Pumpkin Pie wanted seconds. I feel this was a win for me - Oakley is a no sugar kid other then maybe a slip of a pinch here or there in something healthy and these bars? I made them as much for him as I did for me.

He is now into the age 2 stage and has hair.
The kid is a "sick" little boy right now with Strep Throat & a double Ear Infection.
He hasn't been eating anything but he did enjoy about three bites of this dessert before heading back to get more rest.
I know this is going to look like a lot to do to make this but it really isn't. It couldn't be any more simple. That helps when so much is going on at one time.
🎃 Keto Pumpkin Bars w/ Cream Cheese Frosting. 🎃
Bar Ingredients:
1/2 Cup Pumpkin Puree
2 Tablespoons Avocado Oil
1/4 Cup Sweetener (I used Swerve)
2 Eggs
1 Teaspoon Vanilla
1-1/4 Cups Almond Flour
1-1/2 Teaspoons Pumpkin Pie Spice
1/2 Teaspoon Salt
1 Teaspoon Baking Powder
In a medium bowl combine the pumpkin, oil, sweetener, eggs and vanilla.
Whisk together until smooth.
Add in the almond flour, pumpkin pie spice, salt & baking powder.
Whisk until fully combined.

Poor mixture into an 8X8 greased pan.
Bake on 350* for 25 minutes.
Remove from oven and cool completely.
Once cooled make your frosting:
8 ounces of softened Cream Cheese
1 Teaspoon Vanilla
2 Tablespoons Heavy Cream
1/2 Cup Powdered Sweetener
Using a hand mixer, beat all ingredients until smooth.
*You may add 3 drops of food coloring for Festive reasons.
Spoon Frosting onto cooled bars and spread.
1 Teaspoon Vanilla
2 Tablespoons Heavy Cream
1/2 Cup Powdered Sweetener
Using a hand mixer, beat all ingredients until smooth.

Once this step has been done - decorate anyway you would like too.
I added a sprinkle of Cinnamon over the top then some mini sugar free Chocolate Chips to 1/2 of it.
Cut into squares and dig in!
*I did mine in 9 squares but you can cut them however you like them.
I know I will be making these again. Maybe around Halloween - wait, it is around Halloween so maybe a Thanksgiving dessert? That could work too.
